Award-winning Jérôme Ponchelle has been appointed Executive Chef at The Capital Restaurant. The Frenchman, who hails from Dieppe, is confident of maintaining the restaurant's reputation as one of the UK's top kitchens.
Jérôme, 40, who brings 20 years of experience working in restaurants in France and England to his new job including more recently Wiltons in Mayfair, cooked alongside the legendary Michel Bourdin at The Connaught for many years.
He is delighted to be working alongside a well established and incredibly talented brigade including fellow countryman Richard Hondier, who was second in command to Jérôme's predecessor Eric Chavot in the Capital's kitchen for 10 years.
"I plan to respect The Capital's ethos of the finest in classical cooking" says Jérôme. The Frenchman's philosophy to cooking is simple: "I believe it is important not to overwork a dish and to let the product's own glory come to the fore." |
